Abstract

The utilization of food additives in the food processing industries has improved so much in terms of the food’s flavoring, color, appearance, and storage life. Quercetin is one of the food preservatives that contains high oxidative properties. Quercetin acts as an antioxidant in food products to prevent the lipid oxidation that will degrade the quality of the food products.
